Baking Crisis 101

This past weekend I had an order for a decorated 1/2 sheet cake. They wanted it to look "Hot Wheels-ish". I had baked the cake Friday night and planned on decorating it Saturday and having it ready for an early Sunday morning pick up.

Saturday night around 5:00pm she called and said she was on her way to pick up the cake. My heart seriously dropped, did a back flip, and started shaking uncontrollably.

This is how our conversation went down:

Her "Hi Nichole, just letting you know I am on my way to pick up my cake"
Me, in my head "who the heck is this and what cake do they think you are picking up"
Me, verbally saying "what, what cake"
Her "the Hot Wheels cake, is it ready"
Me "no, that order is not supposed to be picked up until tomorrow"

Me, frantically jumping on the computer to double check my calendar to make sure I didn't get my days mixed up.

***heart attack***

Huge sigh of relief when I saw "Hot Wheels Sunday morning pick up"

Me, "the email that you sent me indicates that the pick up isn't until tomorrow"
Her, "what, the party is today. Is there any way you can have in done in an hour?"
Me, in my head "who the heck do you think I am? It takes TIME to do a freaking massive 1/2 sheet cake"
Me, verbally answering "I will try my best"


After I hung up the phone I went into sugar over drive. I had one hours to make frosting and filling, get the cake cut, filled, frosted, and decorated!


Thank goodness I had my awesome hubby to help me, we were able to get the cake done and I must say it looked pretty good for such a quick job.


Me decorating, my hands were throbbing! To get the "grass" look I had to squeeze frosting out of this tiny holed tip, it sucked!

4th of July

We were privileged to spend an awesome 4th of July with our amazing friends Sian and Stephan. Sian is my long time Hawaii adventure friend, seriously as soon as we met we were instant friends.

We started off by having a killer BBQ where Stephan got to impress us with his mad grill skills.

(I at a little to much fruit cause that night the toilet got it)



and yes, of course, I made the dessert.

Do you see a trend in my cooking......brownies, cupcakes, cookies, chocolate..........why am I not obese yet?




One thing I love about Hawaii is the PARTIES.

A babies 1st birthday is seriously the biggest celebration ever, I sometimes think it's bigger than their weddings. Micha just turned 1 last Saturday and I was honored to do his 300 cupcakes and tired cake tower( 22 hours of solid work for any of you wondering). His party was amazing, they had everything from slushy and cotton candy machines, to photo booths, DJ's, face painting, and food galore. I can honestly say that his has been the best party I have been to yet!

This Ohana (aka family for you mainlanders) knows how to party!

I am pretty sure I am obsessed!!!

Obsessed with what you might ask......let me tell you, CUPCAKES & CAKES.

I LOVE baking

I want my own bakery so bad that I spend pretty much all my spare time looking, analyzing, critiquing, and dreaming about my future bakery.

This past weekend I spent 7 hours on Friday (and that's after working 8 hours at my full time job), and 13 hours on Saturday baking and decorating 300 cupcakes, a 2 tiered cake, and a gigantic half sheet cake, and a wedding cake.

Lets just say when Sunday finally rolled around my heals were throbbing, my apartment was covered with flour, sugar, and icing, and my stomach ached from "testing" all the batter and icing.

I have always known that our apartment was small but holy cow, after this past weekend I almost staring knocking down wall just to have some more room. How to solve this problem.....buy and start a bakery :) Trust me it will happen with in 5 years :)

Manco Family Reunion 2010

This is our campsite from up on the hill. Unfortunately, there was a farmer herding his sheep along this hill. For two days all we could hear was "Bah, Bah, Bah" darn sheep!!!

Ok, here is a little story-
We brought our guns up camping with us cause we like to shoot things but somebody (Justin) didn't buy enough bullets for the BB gun. So my brothers and Mike resulted to the cave man hunting style. There were hundreds of these little squirrel/chipmunk things all around Scholfield and our camp and it was there goal to kill them. It was hilarious watching all these men walking around with spears (which they made) and rocks trying to kill these little guys. Every time they would launch there attach you would hear my moms high pitch voice in terror "stop hurting those little guys".



Seriously look at all there postures, this is a Kodak moment!



In the end they did get one, but it was tagged by the BB not there caveman style.
